Latin Name: citrus aurantifolia General Description The West Indian Lime shares many qualities with the lemon and is often used indiscriminately in it's place. Lime oil has a sharp, fresh, terpenelike, somewhat perfumey fruity citrus type odor. The oil is very volatile, but shows increasing sweetness on drying out with the notes moving more towards orange. Distilled Lime oil is mainly used in the food and beverage industry as a flavoring agent and occasionally as a fragrance component. How It's Made The oil comes by steam distillation of crushed fruit peel which is a byproduct of the juice industry. Properties
